The most unusual aspect of Joe Simonton’s 18 April 1961 Eagle River encounter was not his description of a hovering craft, but the fact that he produced physical evidence. What ingredients and physical properties were reported
The laboratory’s findings were remarkably mundane.
Microscopic examination identified:
- fat
- starch
- buckwheat hulls
- wheat bran
- soybean hulls
Based on those ingredients, the analysts concluded that the material appeared to be an ordinary pancake made predominantly from buckwheat. Just as important is what the laboratory did not report. It found:

- no unusual manufacturing process;

The Eagle River case remains unusual because physical evidence existed at all. Yet physical evidence is only persuasive if it differs in some meaningful way from ordinary objects.

Within Wisconsin’s UFO history, the Eagle River incident is often remembered as the “space pancake” case precisely because it produced something tangible to examine. The laboratory work remains one of the clearest examples of physical evidence being subjected to scientific testing in an early American UFO investigation.
Ironically, the tests are memorable not because they uncovered a mystery, but because they largely removed one. The samples did not reveal alien technology, unknown chemistry or inexplicable materials. Instead, they reduced the evidential weight of the pancakes themselves, leaving the case to rest almost entirely on Joe Simonton’s uncorroborated testimony.
That balance explains why the Eagle River encounter continues to occupy an unusual place in Wisconsin’s UFO history.
